Finger-lickin’ Good

This past weekend was my first trip to Austin, and I must say I enjoyed it. One of the great things about Austin (or anywhere for that matter) is the local food.
I had Mexican for the breakfast for the first time, and I am now fully addicted to Migas. If you are still in Austin, or ever there in the future, be sure to stop by Las Manitas Avenue Cafe, between 2nd and 3rd on Congress. Their Migas con Queso are delicious.
If you fancy yourself as a chef, here is a recipe you can try out:
- 2 corn tortillas
- Vegetable oil
- Butter
- 1 tablespoon diced bell pepper
- 1 tablespoon diced onion
- 1 tablespoon diced tomato
- 2 eggs
In a skillet, fry corn tortillas in hot vegetable oil until crispy. Drain. Remove oil from heat, Cut tortillas into bite-sized pieces. In butter, saute bell peppers and onion until soft. Add tomatoes. Beat eggs well. Add eggs to sauteed vegetables. Add tortilla chips. Scramble until eggs are done.
The migas at Las Manitas were a little different from this, basically scrambled eggs with tortilla chips mixed in with cheese and ranchero sauce on top.
Roll’em up in a tortilla with some salsa for a great treat.

I love your page and enjoy reading it. But this is one of most disgusting photos I’ve ever seen ;-) I find looking on one’s meals pretty abominable.
