iphoney
I found this little gem today. It is Mac only, but it emulates the Safari browser that is available on the iPhone to help you see how your site will look when it is viewed with the device. Its called iPhoney and works best if you have Safari 3 Beta installed.

There is also a plugin for Wordpress that will wrap your content in an iPhone-targeted theme when that browser is detected. I am sure there is some way to use Javascript or somethign to detect what browser is being used a send a specific stylesheet to it.

Update: If you are using iPhoney to preview the iWPhone plugin/template on your Wordpress site, make sure you select “iPhone User Agent” from the iPhoney menu. By default, it uses the Web Kit User Agent.

As far as I know, iPhoney is a Mac-only app.
